This weekend Kim’s dad came to visit—we were a stopover on his way to Atlanta for a model railroad convention. All his life he has been fascinated with trains and has been involved with model trains- collecting and building fantasy towns and rail lines. He has always had a train layout at home and has faithfully gone to train club meetings, conventions and currently he visits senior facilities and nursing homes and sets up layouts to the enjoyment of the elderly residents.
One of his favorite meals is roast beef and Yorkshire Pudding- a very British meal. His grandparents on both sides were British and being Canadian, the tradition easily translated. For special occasions growing up, Kim’s mom always made this meal for my dad.
This weekend while Kim’s dad was up, we made a stew with all ingredients grown by us. Potatoes, onions, carrots, collards. We also made Yorkshire pudding for the first time. It was heavenly!
